Pumpkin Chocolate Chip Muffins

 

          1 1/3 cups of cane sugar

          2 Large Eggs

          ½ cup Canola Oil

          1 cup Pureed Pumpkin(Canned or Fresh)

          1 ½ tsp GF Vanilla

          1 1/3 cups of White Rice Flour

          ¾ tsp Baking soda

          ¼ tsp Baking Powder

          ½ tsp Pumpkin Spice

          ¼ tsp cinnamin

          ½- ¾ cup mini chocolate chips

 

          Frosting

         

          ½ cup butter(1 stick)

          1 8 oz block of cream cheese

          1 ½ cups powdered sugar

          2 tsp vanilla

         

 

          Directions

 

          Cream together the sugar, eggs and oil for several minutes.

          Add Pumpkin and vanilla. 

In a separate bowl thoroughly mix all dry ingredients then slowly add it to the

the above mixture until fully mixed together.

 

Fill paper cupcake/muffin holders and bake for 15-20 minutes on 350 degrees

Check for readiness with a toothpick.  You can also check internal

temperature for 200-210 degrees.  Let cool for at least 15-30 minutes before

icing them.
